Holiday baking (and sampling!)

Cut-outs are always fun with the boys. They look forward to it each year and despite the mess, I do too!

Lincoln helped me make the oreo truffles.


I woke up at 5:00 AM to make fresh chocolate chip cookies for Warren to take to work. (MajorĀ “wife points” for me!)

What a relief to be finished with so much of my baking! Don’t get me wrong, I enjoy baking, but I like to space it out a bit more!
How do I get on this cookie tray list?
Haha! Well, we had so many cookies and I only planed on two trays this year. So, I gave more away than usual.

Okay…so I’m wondering…we tried making the oreo truffles this year (they were a great success). But I had REAL trouble with the white chocolate being/staying too clumpy! A number of batches just didn’t want to work. The other problem was coating the whole ball without leaving “traces” of fingerprints or anything else behind. Tell me your secret! :) One thing we did a little differently was we used the red and green cookie gel icing to top the truffles with to make them a little more “Christmasy.” Everyone loved them! Thanks for sharing your recipe! My hubby really wants me to make them again when he gets home from his deployment in a couple of weeks and this time I want to make them look more pretty so if you can tell me how to dip them, I’d GREATLY appreciate it! Thanks!
Ok, Lynn, so I made those cookies and they didn’t turn out as good as yours. They weren’t as soft. Maybe I baked them too long, but they didn’t look over done. I did use real butter though and I know you said you like the tub butter better.
Beth – Sorry they didn’t turn out how you had hoped. Next time try a shorter baking time and tub butter. I think that is key.
Becky – On the batch before last I had trouble with the white chocolate as well. I think my problem was letting it overheat. This past time I made sure to melt the chocolate very slowly. I had no trouble. I use two forks to dip the balls into the chocolate. I let the excess drip off and then place them on the wax paper. Some look prettier than others. I choose the best looking ones for my picture! :) I like your idea of using red and green icing to make them look more festive! I hope this helps, I don’t really have any “secrets.” Mine are not always pretty, but thankfully the boys don’t care about “pretty.” Have a merry Christmas with the girls. SO happy for you that you will soon be reunited with your hubby and the girls with their Daddy! What a wonderful Christmas gift.
